This Barbados style hot sauce has a mellow, fruity blend of ripe bananas, fermented scotch bonnets, pear juice, and lime which gives this sauce a silky sweetness with a gentle, tangy kick. Yellow mustard, warm spices and molasses round it out into a bright, lightly funky flavour that’s mild enough for most but still full of personality.
Try it with: Sweet and sour dishes like agrodolce, battered fish, pumpkin soup or grilled chicken. Or go completely off the rails and put it on a snag in bread.
